Salads. As Homer Simpson says: you don’t make friends with salad. Well, today, I hope that is not always true. Here’s a secret you probably could have guessed: I’m not a big fan of greens. My Mom always had a bunch of trouble trying to get me to eat them. And by far the one I didn’t like the most was spinach. But with something like this, I could totally sing another tune. Spinach and bacon go really well together: spinach has a bitterness that balances out the sweet and savoury bacon. And bacon really helps moisten up spinach. With recipes like these, I might even give Popeye a run for his money.

I always like a good mix of bacon and fruit.
