When Sunday rolls around, and we have to face the yawning chasm of another work week, it’s always nice to have something comforting for dinner that will set us on our way. It’s like being tucked into a snugly bed by our favourite person in the world. Since my favourite person in the world is bacon (and I have a feeling it’s yours, too), why not have a Sunday dinner that celebrates bacon’s life-affirming powers? You can give scallops wrapped in bacon a shot or you can put some bacon in your meatload. Making a super bacon meatloaf.

BBQ Wrapped Bacon Meatloaf

Well, it is summer. So it’s probably a good idea to sneak a few more BBQ sessions in before the whole season goes into the dumpster. This recipe uses a bacon weave approach not unlike the Bacon Explosion. But rather than have the whole thing turn into a fireball on your grill, they recommend putting tin foil around it. The filling is the key part, though, and it is awesomefied by copious amounts of BBQ sauce, ketchup, brown sugar and bread crumbs.

If you are going to make something comfort-inducing with bacon, it seems only cruel to leave out cheese. Eating cheese usually makes me feel like I am wrapped up in a down sleeping bag, so I’d probably try to include cheese even in the non-cheese recipes. Fortunately, this one is pre-loaded with half a cup of cheddar. And as Marjorie, the writer of the site attests, “this meatloaf tasted even better as leftovers the next few days!” Yum!

Paleo Meat Log

This Paleo-diet friendly bacon meatloaf uses only meat and some fresh herbs like sage, fennel and red pepper flakes. More of a meat log than a meat loaf, it gets our seal of approval for its substitution of bread crumbs for more meat. The Paleo Meat Log reminds me a lot of the Bacon Explosion.

This recipe uses what we like to call the double wrap. A Canadian Foodie decided to recreate his moms masterpiece meatloaf. Personally, I see a lot of pictures of ‘Mom’ in here and I am not sure if she is the real one cooking this great meal. Regardless This basic bacon meatloaf is pretty good. It is simple, packed full of flavour and it looks like a little kid is enjoying it.

We’ve always got to find some room for a spicy recipe when you’re listing out bacon recipes. Like cheese – spice and bacon just go perfectly together. This recipe uses a little dash of minced jalapeno to add some mouth kick – vary the amount of seeds to turn up or down the spice.

Gluten-Free Meatloaf

The gluten in meatloaf can be potentially harmful to some people, so I’m happy to point out this recipe to those of our Bacon Republicans who are concerned about this. Instead of bread crumbs, the recipe uses almond meal. Which, now that I think about it, doesn’t sound like a half-bad flavour idea for me, either!
