French Onion Dip – Baconized for the Game Day!

As a wise 10-yearold once put it, when asked about how he would decide who to marry, “You got to find somebody who likes the same stuff. Like, if you like sports, she should like it that you like sports, and she should keep the chips and dip coming.” Truer words have never been spoken. Since the big day is just around the corner, young Alan inspired me to do a second installment of Game Day recipes – a fantastic dip for his beloved chips. Alan, I hope your reading this. And I hopeyou keep this recipe so that your future wife can help you out! This is a variation of my French Onion Soup recipe, instead this time we’re mixing in some sour cream and cream cheese. Enough to keep any sports fan, young or old, male or female, in their seats begging for more.
Ingredients:
3 strips Maple Leaf Bacon
1 ½ Small Onions
4 sprigs Fresh Thyme
1 Bay leaf
1 Condensed Beef Stock packet
¼ cup White wine
¼ cup Softened Cream Cheese
1 cup Sour Cream
Chips (or veggies) for dipping
Salt and Pepper
Optional: chives for topping
Direction
1. Let’s cut up that lovely bacon into nice ½” strips. Give those a good frying and set them aside on some paper towel. We’ll get back to these in a couple of minutes.
2. Grab your onions, give them a fine dice, and toss them into the beautiful remaining bacon fat. Fry these onions nice and slow with your bay leaf and and thyme sprigs for about 15-20 minutes until they are nice and brown. Season with black pepper and a touch of salt.
3. Drop in your condensed beef stock and white wine and let this simmer and reduce until its nice and thick.
4. Once it has reduced nicely, place it in a bowl to let it cool to room temperature.
5. Stir in your softened cream cheese to the room temperature onions.
6. Then dump in your sour cream and give it a good mix
7. Don’t forget the bacon! Never forget the bacon!!!
8. Top with a few diced chives and serve with your favourite chips. Keep ‘em coming!
