Bacon is an incredibly versatile food, and so it ends up being used in a huge variety of ways and in a vast amount of different types of dishes. Bacon is equally at home topping a healthful salad as is it candied and perched delightfully atop a sparkling, sugary cupcake. Bacon is as perfect wrapped around the delicate scallop as is it sauteed with vegetables, adding depth of flavour and richness to a stew.

With so many different ways to use bacon, it can be easy to get caught up in it’s flexibility and just keep trying more and more new things. But, at the end of the day, I can’t think of anything more delicious, anything more perfect, than bacon for breakfast.

Bacon Wins The Day

It turns out that all the folks in Springfield, Mass. agree that a breakfast featuring bacon is the best thing on the planet. This past Saturday, the community got together for the World’s Biggest Pancake Breakfast, an annual celebration in honour of one of North America’s very favourite meals. But it seems that the pancakes themselves played second fiddle despite being the supposed star of the vent. Instead of the golden griddle cakes, the breakfast eaters were clamouring for bacon most of all. In addition to the 500 gallons of batter that was used at the event, over 500 lbs. of bacon was also cooked – and several times that morning, volunteers were sent out for more supplies when the cooks ran out!

Volunteer Talasha Lewis noted that, “the bacon’s the hot commodity…it’s not the pancakes, it’s the bacon!” She has been volunteering at the event for three years, and can’t recall another time when everyone’s favourite breakfast meet was more popular. Looks like next year they’ll have to call it the Bacon and Pancake Breakfast! No matter what was the most popular food item, the event was a great success, raising over $10,000 for the Spirit of Springfield community association.
