Bacon and Caramel Love

There are a lot of sweet flavours that are classically paired with bacon, usually with absolutely delicious results. One of the most classic examples of course is bacon and maple, which has been combined is everything from coffee to donuts and everywhere in between. Bacon and honey and bacon and brown sugar are also very common and tasty treats (especially the latter, which is usually used to make candied bacon). But one of the least praised and yet most delicious, sweet and savoury pairings is the combination of bacon and caramel.

Caramel, which is really just carefully burnt sugar combined with heavy cream, is sweet, soft, melts beautifully and is used in a whole host of desserts. It has a slightly dark, complex sweetness, much like maple syrup, and therefore matches extremely well with the smokiness and saltiness of bacon. Plus, as salted caramel becomes more recognized as one of the great flavour pairings out there, bacon’s natural saltiness becomes more appealing as well.

Cats and Bacon: Four-Legged Bacon Lovers Part 2

If there are two things that the Internet loves, it is cats, and bacon. Cat pictures are one of the most popular image searches online, and a truly unbelievably number of impossibly adorable images of felines are accessible in nanoseconds. With the proliferations of popular memes, like LolCats, cat pictures for a shockingly large part of the internet real estate. Bacon is the culinary equivalent to this animal obsession, as bacon recipes, images and projects regularly rank ridiculously high on online searches as well. Not often enough, in our humble opinion, are these two Internet powerhouses combined. While the love between bacon and dogs is well-documented, we thought it was high time to look at the affection between bacon and cats.

Antony Bourdain Visits Toronto, Loves Bacon

Like many bacon lovers, I’m a huge fan of food television. While I’m not exactly a slouch with the frying pan, there are some evenings when I just don’t feel like a major food undertaking. Those nights, I’m much more likely to grab a bag of sour cream and bacon flavoured chips, put on a pair of my comfiest pyjama pants and enjoy someone else’s culinary creations for a change.

I certainly have my favourite shows, but one celebrity chef who always entertains as much as he makes my mouth water is the incomparable Anthony Bourdain. Continue reading this article…

Bacon and Cola Who Knew You Could Cook With Pop

I’ve been a part of the Republic of Bacon family long enough now that I am finally starting to consider myself a bacon expert. I feel comfortably asserting my bacon knowledge in most conversations, and and consider myself very well informed when it comes to cutting-edge bacon news. My bacon cooking skills have improved mightily, and I am up-to-date on all the current bacon trends, from the still-burgeoning world of bacon desserts to the ever more ridiculous sphere of bacon contests. Bur every once in a while I still come across something that I was not expecting at all, something entirely new.

Before today, I have never really considered the connection between bacon and cola. Sure, I had heard rumours of some chefs using cola to cook with pork products, but that was about it. But as soon as I started doing a bit of digging, I found that the bacon and cola rabbit hole was actually quite deep, and these two products were far more closely tied than I could have anticipated.

Bacon + Beer You Can Seriously Drink It Now

As we’ve discussed before on the Republic of Bacon, beer and bacon is a natural pairing. The slightly bitter hops in the beer brings out bacon’s natural sweetness. While both have rich flavour profiles, bacon and beer both contrast and complement each other extremely well. Bacon and beer are often mixed together when creating delicious dishes – beer-battered onion rings, for instance, or a beer and bacon jam. Whether mixed together on a dish, or whether your bacon-centric meal is simply accompanied by a delicious micro-brew, bacon and beer go beautifully together.

So, of course, it was only a matter of time before some brilliant innovators decided that bacon and beer decided to get even closer together. While some of the beers have been deliberately flavoured to taste like bacon, other come by their smoky meatiness all on their own, through some kind of beer-and-bacon sorcery. No matter how the bacon flavour got in there, since everything tastes better with bacon, these are all sure to be a hit on a sunny afternoon on the patio. Continue reading this article…

Bacon Science

Did you know that bacon can be both delicious AND educational? Not only is bacon perfect for putting in your mouth, but it also gives you something to feed your brain. While my idea of a bacon science project would probably be something a lot closer to “Studying The Effects of Bacon As A Motivator” (I would be my own ideal test subject, of course), it turns out that bacon is a pretty cool and science-worthy subject all on its own.

While we definitely recommend that you exercise extreme caution while attempting any of these experiments (and make sure that any kiddos in the vicinity have all the parental supervision that they may need), some of these experiments are totally worth trying out for yourself. On the other hand, others are definitely something you’ll want to leave for the professionals. Either way, they are all pretty interesting. Now, brace yourselves, bacon lovers, it is time to do some science! Continue reading this article…

Bacon Pies

Bacon is my favourite food, full stop. There is no edible or comestible in all the world that can overthrow my love for the crispy, salty, meaty perfection of bacon. However, were I to admit any kind of rival to bacon’s sway over my heart, it would be pie. The Republic of Bacon loves pie, too!

My love for pie goes back to my earliest childhood. My mother was a fantastic baker, and I have fond memories of sitting on the kitchen counter watching her carefully cut cold butter into flour to make a homemade pie crust. Whether cinnamon kissed apples or luscious pumpkin or decadently sweet pecans were destines to fill that crust, I always knew the pie was going to be good. Homemade pie was one of the first dishes I perfected when I was learning to cook for myself, something I learned out of sheer desperation for pie that was just as delicious as what I remembered from my childhood (most store-bought stuff can’t hold a candle to the real think). Pie remains my most beloved comfort food, something my mom can always count on to bribe me with. Continue reading this article…

A Life With Bacon

In a recent interview with ESPN.com, professional skateboarder Mark Gutterman states that “A life without bacon is no life at all.” Gutterman speaks from a transitional moment in his career, at a time when all of his previous sponsors have gone out of business and new one are in the process of signing on. To weather the storm of a life in flux, he took a job in a small cafe, surrounded by the smell of bacon every day, for the comfort of it.

This interview got me thinking about my own life with bacon. It’s no big secret that I love the stuff, as I devote my time and energy to working on The Republic of Bacon to spread the bacon love as far as I can. But it is more than that. The more I think of it, the more I realize I can chart my own personal history through my ongoing love affair with bacon. Continue reading this article…

Bacon Magic: Redeeming Airline Food

If you’ve ever needed the ultimate piece of proof that bacon can truly improve any meal, no matter how bland, look no further! Research has shown that bacon can redeem what is notoriously the weakest cuisine of all time: airline food.

Airline food has been much maligned over the years, having been the butt of nearly every professional comedian’s jokes at one point or another. While jokes about airline food’s terribleness are so common they have become cliche, this does not make the criticism any less true. Travelling can be a hassle at the bets of times, especially air travel these days, with crazy new security requirements and other stress. Just when you need a comforting snack most, airline food always answers with something incredibly unappetizing. Continue reading this article…
