With the advent of fantastic weather upon us in Toronto, one tends to look to fresh and vibrant flavours in one’s diet. So, this week I turned to a classic Italian appetizer. You’d commonly see this during one of the first courses at a wedding or other large feast – we tend to have the large feasts quite often. The bright and fresh tomato marinated in olive oil is paired with a super-light slice of bocconcino and finished with basil. Since tomatoes love salt, I thought the addition of bacon would be fantastic, plus it would add an element of crunch lacking from the dish. So here we go. The easiest appetizer you’ll ever make. If you grow your own tomatoes, this dish will be heavenly. There is nothing better than a tomato fresh from the garden!

April is National BLT Month!

April is truly the best month to be a bacon lover. And why is that, you may ask? Well, it turns our that the same month that Spring really comes to stay and that we celebrate Earth Day is even more fantastic: it’s also National BLT month! All month long, we get to celebrate the wonder and deliciousness of our favourite sandwich in the whole wide world, and that makes all of us at the Republic of Bacon very happy folks indeed.

The sandwich that we know as the BLT actually has quite the storied history. Did you know that it has been around since the late Victorian era, and in believed to have descended from the tea sandwiches commonly served at the time? How very proper!

Bacon Love Friday: A Bacon Funeral

Death is a pretty heavy subject for the Republic of Bacon. Generally speaking, we prefer to talk about the way in which bacon enriches the lives of the, well, living. The wonderful taste, the incomparable smell, the texture of bacon – all of these are very much the pleasures of the flesh, of the living bacon lover. But even these wonderful ways of experiencing bacon come to an end some day, and it is only responsible to plan for the inevitable.

That said: bacon lovers, have you given a thought to the inevitable? With so many people writing their living wills and making funeral arrangements years in advance, to make sure their bereaved loved ones don’t have to bear such a burden, it is only responsible to give some thought to the way you would like your life to be celebrated. And if you anything like us, great lovers of bacon, then you will want your favourite food to be a part of those celebrations.

Beer Can Chicken Recipe… Baconized!

Chicken is one of the more commonly consumed proteins in North America. Because it’s so common, there are a ton of variations even on the simple roasting method. Do you spatchcock under high heat? Do you roast low and very slow? Do you start high and finish low? I’m sure there’s many people on forums online who advocates arguing about their favourite method. What’s my favourite , you ask? Easy… shove a beer inside the chicken! Yes, you heard me correctly. Sit the bird on a can of beer. This way the outsides can be nice and crispy during a dry roast, but all the meat is being steamed from the inside out with wonderful, flavourful beer! You literally cannot screw this up (well… unless you burn the bird). It will come out moist and juicy every time.

Now, let’s drape the gosh darn thing in bacon and make your mouth water.

The Smell of Bacon…Is A Problem?

If you asked me to name my top smells of all time, bacon would definitely be at the top of my list. The smell of bacon is a notoriously beloved aroma, and once that inspires positive feelings is almost everyone who encounters it. Waking up to the smell of bacon cooking is rivaled only by the scent of a fresh pot of coffee brewing on a weekend morning, and nothing calls a family to the table faster that the smell of bacon drifting through the house or ever through an open window. Heck, this year an entire parade was dedicated to celebrating just the very smell of bacon. And really, what’s not to love?

Well, it turns out that some people in New York have actually started to complain about the smell of bacon pervading their neighbourhood. We personally think “bacon aroma” is something that would attract potential homebuyers and up the market value of homes for blocks, but what do we know about real estate. It seems that at the centre of the issue is a new breakfast restaurant location that recently took up residence in New York’s East Village.

Easter for Bacon Lovers

Easter has always been one of my favourite holidays. Most of the Easter celebrations I remember from my childhood coincide with some of the first really beautiful days of the year, and there are few things that feel quite as joyful as the knowledge that Winter is finally gone for good and Spring is here to stay. Kids and grown-ups love Easter equally, and searching for (and hiding) chocolate eggs and eating delicious meals with families and loved ones is a great way to spend a weekend. And of course, who doesn’t love the tradition of an Easter ham?

Just think, bacon lovers: your Easter celebrations are probably also, in many ways, a celebration of bacon as well. You need energy for those early morning egg hunts, and so a wonderful breakfast including crispy bacon is the perfect way to fuel up for a bust day. Eggs are also a prominent part of most Easter traditions, and what pairs perfectly with that? Bacon, of course!

While bacon and Easter suit each other quite naturally, you may be wondering if there is more you can do to ensure that your celebrations include even more bacon that what might incidentally just occur. Special Marinade Chicken Recipe – Phenomenally Awesome

So, I have this roommate. He loves to cook almost as much as I do… but he’s much better at doing dishes. It’s a good arrangement. In any case, I caught him making a special marinade for his Maple Leaf Prime Chicken Breasts. I was intrigued because it was like NOTHING I’d ever made or not something I don’t think I’d ever come up with. My disdain was apparent, but he convinced me with three simple words: “Just try it”. So I did. And it was phenomenal.

This recipe uses exact sauce he prepared that day but with some bacon to keep the chicken pieces supremely moist and juicy. I promise you that if you try it, you’ll absolutely love it as I do now.

It’s 3am. You’ve just got out of your local bar, club or favourite watering hole. You’re staggering clumsily to find some sort of public transportation to take you to your humble abode (because we’re responsible citizens here at the Republic of Bacon, aren’t we?). But something hits you. It hits you right down deep in your loins. All of a sudden, you’re absolutely starving. You’re a little confused as to how this came about so suddenly, but you need to feed the craving nonetheless. You look around for an open establishment, but, alas, everything is closed. You are just about to call it quits until you stumble on the heavenly sight that is the street-meat vendor! Your stomach grumbles in anticipation. You get the German sausage, load it up with mustard and sauerkraut and you go to bed a happy, happy individual.

This is my attempt at recreating the satisfaction we all experience above… but with BACON!

There is no question that bacon represents the highest pinnacle of perfection when it comes to the culinary arts. Here at the Republic of Bacon, we can think of no more beautiful work of art than a perfectly crispy strip of bacon placed next to some buttery toast, sunny-side-up eggs and golden hash browns.

But there is more to art than just food (apparently) and it turns out that bacon has often been the muse – and event the materials of some incredible artists over time. Today, we’re going to highlight sculpture, and take a look at some of the finest works of art in the world that have to do with bacon.
