Love For The Smell of Bacon

Bacon is renowned for it’s near magical powers to bring people together. The aroma of bacon wafting in from the kitchen calls a family together more readily than any dinner bell. An offering of bacon is sure to solidify and truce and heal any grudge, and event he pickiest eaters and generally won over by the enticing smell and delicious flavour of bacon. To smell bacon is to smell peace and comfort.

But it is not only people who are brought together through the wonder of bacon: a love for this tasty product crosses even species barriers, as participants in the 19th Annual Beggin Pet Parade proved this past weekend.

Bacon Love Friday: Bacon and Potatoes

First and foremost, let’s be clear: bacon goes with everything. There are the obvious pairings, of course: the classic bacon and egg breakfast, the timeless beauty of a bacon and tomato sandwich, the perfection that is a bacon cheeseburger. But as bacon’s popularity has exploded in the past few years, more daring chefs have proven that we need not stop at these tried-and-trusted combination, or even only think of bacon as a savoury food. With bacon being combined into milkshakes, shaped into sushi, and even drizzled with chocolate. With no end in sight to the exciting bacon combinations, sometimes a bacon lover can spend all of their time trying new and novel bacon dishes.

Every once in a while, however, you have to return to the old standbys, those traditional bacon dishes that made you fall in love with its smoky saltiness to begin with. In honour of one of my favourite combinations, for this edition of Bacon Love Friday we’re going to look at the classic combo of bacon and potatoes. Anyone who has had a baked potato loaded with butter, sour cream, bacon and chives knows this is one of the best things in the entire world.

Yesterday was the epitome of cooking without a recipe – something of which Chef Michael Smith would be extremely proud. After I learned of his tweet about the Republic of Bacon the other day, I was immediately inspired. He has always been one of my favourite celebrity chefs [Editor's Note: I thought I was your Favourite chef!], with a focus on simplicity and creativity – letting the quality of the ingredients shine. That’s definitely something strongly advocate.

I went down to my local market on the hunt for some beautiful ground lamb for a potential Shepherd’s Pie. Unfortunately, everyone was fresh out…BUT I was able to grab some lovely, locally grown venison sausage from Ontario Harvest. It was already seasoned with some sage and cranberry – so I was well on my way to making this Shepherd’s Pie shine. I passed through a couple other local grocers to see what I could add to enhance this gorgeous venison – I picked up a bit more sage, thyme, some organic parsnip and lovely fresh chicken stock, along with the obligatory bacon and potatoes. I ran home with anticipation, and this is what happened…

We cannot imagine a more solid, impressive an honourable name than Bacon. Throughout history, many notable figures have borne the name Bacon, and we have written about several of them here at the Republic of Bacon before. From great thinkers to important artists, the name Bacon has a proud and storied lineage. Those who are lucky enough to be graced with the name Bacon have owned the name proudly and left great legacies behind.

It should come as no surprise, then, that a number of authors have also adopted the name Bacon for their various fictional characters. In novels, comics and other creative prose, writers have turned to the name Bacon to add to their characters’ personalities, giving them a strong, unique and positive moniker that readers will have an innate affection for. 10 Layer Breakfast Cake – Pancake Tuesday is back with a vengeance

So today is Mardi Gras, or Fat Tuesday, or Shrove Tuesday, or (my personal favourite) Pancake Tuesday. It was ritual in my household to eat a big fat stack of pancakes on this day every year and I definitely continue that tradition. This year, I figured I would take it to the next level. First, I added bacon of course. Second, I added my favourite hazelnut spread. Finally, I made it bigger and badder than anything you’ve ever seen… EVER! I’m not sure if you can handle this.

Even though Valentine’s Day officially happened earlier in the week – which means all that delicious heart-shaped chocolate is now on sale! – love is sill in the air here at the Republic of Bacon. February is still sprinkling it’s magic love dust all over it, and cupid’s arrows are a-flying. What’s that tantalizing aroma permeating the air? That’s not simple the smell of bacon, sizzling away and making out tummies rumble. That is also the scent of love, of romance and togetherness. Bacon Pies

Bacon is my favourite food, full stop. There is no edible or comestible in all the world that can overthrow my love for the crispy, salty, meaty perfection of bacon. However, were I to admit any kind of rival to bacon’s sway over my heart, it would be pie. The Republic of Bacon loves pie, too!

My love for pie goes back to my earliest childhood. My mother was a fantastic baker, and I have fond memories of sitting on the kitchen counter watching her carefully cut cold butter into flour to make a homemade pie crust. Whether cinnamon kissed apples or luscious pumpkin or decadently sweet pecans were destines to fill that crust, I always knew the pie was going to be good. Homemade pie was one of the first dishes I perfected when I was learning to cook for myself, something I learned out of sheer desperation for pie that was just as delicious as what I remembered from my childhood (most store-bought stuff can’t hold a candle to the real think). Pie remains my most beloved comfort food, something my mom can always count on to bribe me with.
