The Perfect BLT – It is Scientific

As you might expect, we here at the Republic of Bacon are huge fans of the BLT. The bacon, lettuce and tomato sandwich is a cultural icon of bacon appreciation. These delectable sandwiches are available almost everywhere, from the humblest greasy-spoon diners to the most revered upscale restaurants. We have written about the BLT here in the past, most recently when we celebrated BLT Sandwich Month in April.

Everyone knows the basic ingredients that go into making this classic sandwich, and the assembly is simple enough even the greenest college student who still burns mac and cheese can still make a fine BLT. But what about the perfect BLT? How can you make a simple combination of ingredients not just ordinarily delicious, but spectacularly delicious?

I recently took a trip to a few cities in the southern United States – places that truly take pride in the local definition of Barbecue. Each region had slightly different base flavours, slightly different techniques, slightly different recipes yielding a whole cornucopia of differing results. It was truly an amazing experience. The thing that seemed to remain constant was the side dishes that were offered alongside your hunk of barbecued meat. One of my favourites – hushpuppies. I had no idea what they were composed of at the time, but I was completely intrigued by their crispy exterior and light, fluffy centre. I thought they were made with a complex, old southern recipe, but I was wrong. They are ridiculously easy to make

Bacon and the Subtle Art of Bribery

Bacon is not only a delicious food, capable of bringing joy and feelings of satisfied fullness to folks the world over. Bacon can also be a useful tool in the hands of more enterprising individuals. Both in your professional and personal life, you can use bacon as a thoughtful (and very convincing!) negotiation tool.

By that, of course, we mean that bacon is one of the most effective bribes out there. Here are just a few of the ways you can use bacon to convince colleagues, friends, and romantic partners that helping you is to their advantage and the quickest way for them to get some tasty (and creatively presented) bacon. We however, do not promote bribing individuals. We promote a solid solution to negotiation and if it just so happens that bacon is used as part of your negotiation. We are all for it. Lets be serious here, Bacon can easily seal any deal.

Bacon Love Fridays: Bacon Salads

Bacon is many things. Bacon is salty, bacon is crunchy, bacon is sweet and bacon is satisfying. First and foremost, however, bacon is meat. Tasty, tasty meat. Bacon is the meat that carnivores relish above all others, and it is the meat most likely to make vegetarians cheat. In just about every way imaginable, bacon is the opposite of a salad.

Where a salad is virtuous, bacon is indulgent. Where salads are emblematic of vegetarianism, a bacon coat of arms decorates the hearts of proud meat-a-tarians the world over. But this doesn’t mean that bacon and salads can’t team up occasionally to make this symbolic health food more awesome.

Baconized Corn Dip Recipe

I have to say this upfront: this dish blew my mind. I knew this one would be pretty good, but I had no idea it would be THIS friggin good. The reason I wanted to develop this recipe was because I wanted a way to eat corn with corn chips. It’s corn season right now and I should have a way to eat it in any form possible, even eating corn with corn in a sense. This turned out WAY better than I ever expected. The magic comes not only from the bacon, but from a concentrated vegetable stock that I added. If you can’t find concentrated stock, substitute some vegetable paste.

Corn dips are usually made one of two ways, either creamy or fresh. I decided to do a slight mix of both. I wanted to maintain the fresh taste of the corn, but I wanted something to bind the whole mixture together. A little bit cream cheese was the answer and it took the dish to a whole new level.

I guess this is instalment 3 of “What the heck can Chef Rob do with Mac n’ Cheese”. I had some leftover mac n’ cheese from my Grilled Mac n’ Cheese escapade that I knew I could do something creative with. Unfortunately, I was drawing a blank. It is a good thing I have wonderful friends around me – one of them hinted that they had seen somebody batter and deep fry some Mac n’ Cheese. So I thought I’d give it a go.

Unfortunately, It didn’t turn out as well as I’d hoped. I did not have enough béchamel sauce to keep everything together, so I was unable to make little balls. But I will hint at how this should be done.
