Not to toot my own horn, but I am a pretty darn fine amateur chef. Invitations to my dinner parties are accepted gleefully (or turned down with great regret), and my guests are always generous and effusive in their praise. I find cooking pleasurable and relaxing, and love putting food in front of hungry, happy people.

That said, every now and again, I encounter a personal kitchen nightmare. Something unexpected, or impossible, or disastrous occurs, and suddenly I have to come up with a dinner solution that would make a genuine wizard panic.
Without fail, every single time something like this has happened, bacon has come to my rescue. I am pretty convinced that there is almost no food emergency that bacon cannot solve. Here are just a few examples of meals that were rescued by bacon.

A little while ago, I posted a Mac n’ Cheese recipe. It was remarkably delicious. I was craving it this week, but I was also craving a Grilled Cheese sandwich. Then it hit me – I could have both… at the SAME TIME. Yes, what I’m attempting to do here is make a grilled cheese sandwich, but instead of the cheese, I’m putting Mac n Cheese. Yes. Go ahead, salivate. I know you want to. Don’t hold back, it’s an involuntary reaction to deliciousness, you can’t help it.

The bacon explosion is pretty much the most popular bacon recipe in the history of the interwebz. It’s no big mystery as to why – it’s only the most glorious of all glorious things packed into one big log of meaty goodness. There are plenty of variations online, but this is my take. I decided to make sandwiches out of bacon explosion rounds and top the sandwich with an awesome apple coleslaw. The creamy, freshness of the slaw balances the meaty spiciness of the explosion perfectly yielding a full on fireworks party in and around my mouth.

Although Camping season is unofficially over for the year, barring those crazy people that like to camp in freezing conditions, I wanted to share with you some of my outdoorsy bacon escapades that I experienced over the summer. Cooking over the campfire is a completely different adventure than cooking in the controlled conditions of a kitchen. You’re literally cooking with fire.
A friend brought along this campfire toast griller thingy with him. I knew I had to use it… and use it with bacon. And since it was only 9:30am, I figured I’d throw some eggs in there, too. ‘Almost’ very similar to my bacon and eggs recipe. You’ve got to keep things simple when you’re cooking while camping, so a nice, hearty, fire-grilled bacon and egg sandwich (only attainable with a campfire) was on the menu.

It’s been over a year since I first began writing for this illustrious site, and in that time, we have covered innumerable bacon-relate topics. In fact, I can’t think of any bacon topic we’ve missed.

And in all that time, I’ve been – along with Chef Rob – your faithful chronicler of the bacon condition. It’s at milestones like this that you realize how precious life is and blah blah blah. However, what’s important is that we’ve spent a lot of time thinking about bacon and sharing an adoration for its intrinsic amazingess.
