Even if the calendar says that we officially have a little more time, the beginning of September and the return of all the kids to school means that summer is officially over. No more lazing on beaches or in parks. No more ambling in the night air after dinner.

Remember my famous cookie recipe? I hope you do, super popular cookie recipe that won rave reviews from my mom. Do you remember my Bacon and Eggs Ice Cream Recipe? Of course you did, who could forget about making bacon and eggs into an ice cream! I decided to combine those two recipes plus a hazelnut spread to add some added flavour. My inspiration was very simple, who doesn’t like ice cream sandwich recipes!?

I combined two amazing recipes into one amazing recipe. I made mine a bit tall, I split it in half after I took pictures and shared it with two house guests who stormed in.

Bacon has been slowly infiltrating every part of our lives. Some people see this as a horrible trend. I see this as the natural progression of evolution. Soon, every object in our universe from the tiniest particle to the largest star, will have been converted into its most perfect form: bacon.

I am a bit shocked my awesome readers didn’t share my Muffin Recipe over 200 times. Not a problem at all I know you all will love this super easy to make Potato Latkes recipe. I wanted to keep a mild theme of potato’s and bacon in my recipes this month. You can clearly see that with my favourite potato recipe. I really wanted to make a recipe that was picked by the readers.

I use this Potato Latkes recipe a lot. I use it as an appetizer or more of a snack before the main meal. It keeps people calm (I hate the “Is dinner almost ready?” questions), subsides some hunger and gives me enough time to prepare some of my favourite meals. Here at the Republic of Bacon, we make many claims in favour of bacon. After all, we are huge fans of the stuff. If it were legal, we’d probably bathe in it. (Wait? It is legal? BRB!) But we are also staunch defenders of truth and justice and all of that hoo-hah. I mean, what honourable bacon eater wouldn’t be?

Breakfast Recipe – The Best Breakfast Muffin Recipe

I am a bit upset because it looks like my last breakfast recipe wasn’t a hit. My Potato Bacon Recipe just hit 30 Facebook shares. For some sites 30 Facebook shares would be awesome but I always aim high and usually aim at almost impossible numbers. Take a look at my donut recipe that has over 400 Facebook shares or even my bacon and eggs recipe with over 350 Facebook shares. As you can tell I am a bit upset with the last recipe compared to all my other amazing recipes. This is why I decided I’d take another shot at making an AWESOME breakfast recipe.

My muffin recipe was inspired by my latest visit to my local cafe. A small shop run by a super nice old english lady who calls me a lad. She suggested I try some muffins with my regular coffee. I tried it loved it and decided I needed to make it even better by adding… BACON! I also wanted to give it a bit more fluff and not have it taste very dry.

I promise you this recipe is awesome and if it gets more than 200 Facebook shares (very high number) I will virtually high-five each person. I will even take it one step further.
