If there are two things that the Internet loves, it is cats, and bacon. Cat pictures are one of the most popular image searches online, and a truly unbelievably number of impossibly adorable images of felines are accessible in nanoseconds. With the proliferations of popular memes, like LolCats, cat pictures for a shockingly large part of the internet real estate. Bacon is the culinary equivalent to this animal obsession, as bacon recipes, images and projects regularly rank ridiculously high on online searches as well. Not often enough, in our humble opinion, are these two Internet powerhouses combined. While the love between bacon and dogs is well-documented, we thought it was high time to look at the affection between bacon and cats.

Bacon Love Friday: Cooking with Bacon and Booze

While I’m not exactly a gourmet chef, I’m pretty proud of my ordinary culinary creations. I find cooking a very enjoyable activity, probably because I associate it with an even more positive activity soon to come: eating. Being able to make my own bacon dishes definitely makes me a happier person, and means I always have the perfect offering to use as a reward to bribe when I need a friend to drive me to the airport of help me move. Two of the things that I love cooking with the most these days is bacon, and alcohol.

Booze is an incredibly versatile ingredient. The alcohol burns off in the cooking process, leaving behind a depth of flavour and a real richness, especially in dishes that need time to simmer or braise. Similarly, bacon adds so much to a complex dish and can elevate a really simple one. So, in honour of these two great ingredients, this Bacon Love Friday will serve as a tribute to dishes that contain both bacon and booze.

You know what I just realized? I haven’t wrapped anything in bacon in a rather long time. I mean, bacon is simply designed to do just that and I haven’t been taking advantage. Its long narrow strips of meaty goodness just beg to be snuggled around other meats, veggies, grains or whatever your heart desires. Bacon is designed to give hugs to other things and impart them with delicious bacony flavour. Bacon is a lover not a fighter. Bacon wants world peace. Bacon Comfort Food

Depending on the season, we all eat differently. Every spring, I suddenly find myself craving all the lovey fresh vegetables that the season has to offer. In the summer, my taste buds develop a love for everything light and refreshing, like lots of fruits and salads, and of course the ubiquitous summer barbeque. And when a slight chill returns to the air and autumn is upon us again, the only thing that really satisfies me is comfort food.

When you think about it, bacon really is an ideal comfort food. The crunchy texture is satisfying, the salts and fats give us the indulgent feeling we crave, and the smoky flavour makes it feel like we’re doing something nice for ourselves just be eating it. So today, since it happens to be raining and the idea of staying inside and puttering around the kitchen sounds totally delightful, here are a few of my favourite bacon comfort food recipes.

I’ve started to try something new in my kitchen – something that has been mentioned on the Republic of Bacon in month’s past. I’ve started on what’s called a Paleolithic Diet, more commonly referred to as a Paleo Diet. Yes, I’m eating like a caveman. It worked for the first 95% of our existence as a species, and from what I hear those early dudes were quite the specimens, so I guess it should still be good today. Because cavemen didn’t farm, nor were they able to process any grains, that means that breads, pastas, rice and all that good stuff is out. That’s right no pasta! So how the heck am I making Spaghetti Carbonara? Well, use a spaghetti squash, of course! When you cook this squash whole, you can go at it with a fork and it turns into these really cool long strands just like spaghetti! Caveman’s pasta!!

Fall: The Season of Romance (and Bacon)

When you think about romance, most likely the first season that springs to mind is, well, Spring. It is easy to see why: after a long cold winter, all the flowers are starting to bloom, the birds are singing, and new life and freshness is everywhere. The sunshine and warmer days put everyone is a good mood. Seems like the perfect time for romance! But with everyone so fixated on Spring as the time for love, I feel that Fall sometimes gets neglected – and personally, it is my favourite time to get close to someone. The changing colours make for beautiful walks through the park, seasonal menus are extra delectable and just begging for dates, and the cooler temperatures are made for snuggling. That sounds pretty darn romantic to me!

Some of the most delicious and most popular recipes we have ever featured on the Republic of Bacon have been those that feature foods wrapped in bacon. It is no small wonder that bacon-wrapped recipes tend to garner so much attention: they are also some of the tastiest creations out there. Wrapping food in bacon keeps meat moist and tender, ads a delicious salty crunch to the outside of food, and makes for a stunning presentation. Simplified Coq au Vin Recipe

Like I mentioned in my last post, I’ve just relocated half way across the country to the most eastern tip that is St. John’s, NL. Because of this, my kitchen is kind of bare. I don’t have all my regular herbs and spices, my pantry full of goodies is actually quite empty, and my fridge is as barren as the Sahara desert. Of course, there’s bacon, but not much else. My quick trip to the store allowed me to pick up some basics so I could feed myself while I got settled in: some chicken, some mushrooms, an onion or two and wine – there will always be wine. Then I realized I could make a classic French recipe – heavily trimmed down for both me and you – and showcase the simplicity at its core. Coq au Vin, literally translated to Rooster with Wine. This is usually a whole chicken cooked in 2 or 3 bottles of wine with some bacon or other cured pork, mushrooms, pearl onions and a basic stock. I didn’t have a whole chicken and I wanted to drink the majority of my wine, so I’m going to show you a pan-seared version of the same flavour profile.
