Let me paint you a picture. Follow me on this escapade…

It’s a Friday night and you’re painting the town red. You’re having a fantastic evening; hangin’ with your friends, chattin’ up the ladies at the bar (or males at the bar). It’s getting kind of late. Your friend turns to you and she says she’s starving; craving some poutine, to be exact. Poutine, brilliant! It would fill the void your soul in the most perfect way. Unfortunately, according to your iPhone, the nearest poutinerie is nowhere near your current location and you’re not gonna settle for just any fly-by-night bar slop. Since you are a person of dignity, you cut your losses and head home… unsatisfied. This was what I experienced this weekend.

Bacon and Wine Pairing – We are Refined Eaters

With bacon becoming more popular, many people are trying it in different meals. Eating bacon at dinner used to seem strange; now it is perfectly natural.

But as more people eat bacon with dinner, new questions are popping up. One of the questions that comes up when you are serving bacon at dinner that we don’t often address on Republic of Bacon is: what alcohol can you pair bacon with?

The short answer is that you can pair it with a whole lot of different beverages – it depends on what you cook your bacon with. For instance, a more Southern-inspired bacon meal might work best with an iced tea-based alcoholic beverage. If you are eating bacon with Austrian-inspired food like dumplings and cabbage salad, you might choose a pilsner. Your choice also depends on what type of bacon you use. Some bacons are fattier than others, and others are sweeter. Take these factors into account when you are deciding between the types of alcohol that you want to serve.

What Do You Add To Your Bacon, Any Ingredients?

We get a lot of responses on our Facebook page to the baked bacon post. One of my favourites was Sarah Bakker, who bakes her bacon with a special addition: “Baked for sure! And the brown sugar makes it that much better!” (Karen Sinclair also bakes with brown sugar.)

That’s one of the benefits of baking bacon that I neglected to mention (I know I am not perfect, my father reminds me everyday) – the fact that if you bake, you can either sprinkle something onto your bacon before you bake it, or that you can marinade it. This can be more difficult if you are frying. And as Sarah points out, adding something sweet, like brown sugar, can really compliment the salty flavour of the bacon.

Creme Brulee – Bringing the French Cuisine to Bacon

On its own, Crème Brûlée is one of my favourite desserts. On its own, caramelized bacon is the greatest thing ever. Put them together and what do you get? A level of awesomeness of which only the moon landing is equivalent.

Just as it was with the Bacon Chocolate Cookies, the average human being thinks I’m insane for attempting this recipe, but words cannot accurately depict how extraordinary this dessert is. Now, I’m not saying you should eat this all the time. No – the bacon awesomeness mixed with chocolate is so good, your friends will become jealous. Voiding you the opportunity to participate in society.  But on those special occasions where both bacon and dessert is required, this is your go-to recipe.

This weekend is Canadian Thanksgiving, so I decided to do something that could spice up your turkey. I’m talking about spicing it up in terms of flavour, not spicing it up like making a turkey bikini.

I absolutely love butternut squash, and it’s finally in season. When I walked into my local grocery store, there were piles and piles of them at the front. I knew I had to do something with it since bacon and squash go so well together. I find I say that a lot – “bacon and *insert food here* go so well together”. Coincidence? I think not. Bacon compliments everything. If you and bacon were walking down the street together, I’d bet he’d comment on how nice you looked or how much he liked your shirt. Bacon is just THAT complimentary. I digress…

This dish is special because it can stand alone as well, although it will work best as a stuffing to your thanksgiving turkey. You can make this as a rice side dish (or even main course) for any occasion. But for thanksgiving, I recommend you do this a day ahead and stuff your turkey the next morning just before you cook it. I’m bringing mine to my family’s thanksgiving dinner to use!
