So I know what you all are thinking. “Salad? No really… salad?”

Well, salad has gotten a bad rap. A lot of people think of them as boring, sub-standard, diet foods. This is probably because these same people have only been exposed to plain, boring, sub-standard, diet salads. Not many moons ago I, too, was under the “salad is for squares” spell… until I discovered the secret to making them fantastic and meal-worthy (with bacon of course). All you have to do to make a great salad is to do the following: Pick a leaf, pick a fruit, pick a cheese and pick a nut or meat. The possibilities are endless. Let’s try peppery arugula, thinly sliced pear, grated parmigiano reggiano and prociutto all tossed in lemon and olive oil. Or how about watercress with raspberries, brie and toasted pine nuts in a dijon vinaigrette? See? Not boring at all! You can deviate from this practice as you please, don’t forget. Imagination and creativity is ALWAYS welcome in the kitchen. Remember the bacon cookies? It is all up to your imagination.

Gypsy Bacon Great for Campfire Cooking

Campfire season is rapidly dwindling as the weather gets colder. However, if you do have an opportunity to go to a campfire, you might think of trying to prepare a very traditional form of bacon: Gypsy Bacon.

Like many things to do with the Gypsies, there is not much idea of where it came from. But this form of bacon cooking has been around for years, and is still practiced by Gypsies around the world. Portable and delicious, it is an easy way to prepare bacon when you are constantly moving around and do not have access to a stove.

Buzz the Butcher has the Best Bacon in New Zealand

Murray Sattler has been crowned with the prestigious title of producing the best bacon in New Zealand.

Sattler, who is also infamously called “Buzz the Butcher”, which is a phenomenal nickname in and of itself, received the call Monday informing him that his bacon is best.

New Zealand’s Annual Bacon Competition requires contestants to submit a portion of their bacon to be cooked and judged by the officials over the weekend in Petone. Sattler sent his “middle-eye” bacon to be judged, which he describes as the sirloin steak of bacon. I’m getting hungry just thinking about this!

The size and scale of the event is quite large – with over 24 judges tasting 184 different types of bacon. They are judged on different criteria such as texture, shape, aroma, etc. – both cooked and uncooked.

Bacon Theft – Someone Broke the Law

Bacon can get people excited. Sometimes, it can get them a little too excited – excited enough that they will break the law to get it.

Case in point: earlier this month, a thief broke into a home in Surrey, England and stole a pack of bacon from the home’s fridge. The owners of the house were sleeping upstairs. He also appears to have stolen a mobile phone that was in the hallway. But if you thought his main focus was the phone, consider this: he left a piece of bacon hanging on the home’s doorknob. We can only guess that this was a taunt for the people he robbed.

Now that the NFL season has a couple weeks under its belt, I’m sure there are those hardcore fans already planning their Superbowl parties. For those of you who are unaware, these parties always (well, at least the good ones) contain these three necessities, aside from the football, of course: beer, nachos and chilli. I’d like to take a moment to salute these superfans for allowing me to keep my annual chilli quota covered in a single day. I’d also like to take a moment to thank Beth Tucker for inspiring me to create this dish.

To these superfans, what would you say if I were to combine all three of these things into some magical concoction? Now, what would you say if I were to add bacon, the vegetable from heaven, in a significant quantity? Hold on. Let me go get the mop to clean up the mess because your brain just melted all over the floor. (Do brains really melt?)

Best Way to Bake Bacon

When you first cooked bacon, you probably fried it in a pan. Heck, that’s how it’s shown in the movies. And frying pans can make cooking bacon quick and easy: put in some cooking oil, drop in the bacon, turn on the burner and away you go.

But as anyone who has cooked bacon knows, the bubbling of the cooking oil can sometimes pop onto your exposed skin. Frying also requires a lot of watching to make sure you the bacon doesn’t stick to the bottom of the pan. One of the ways to avoid these problems is to bake your bacon.

There are many ways to bake bacon. And although I’ll provide a description of how to do it, you’ll have to test drive it the first time to see if it cooks the way you want it to. After all, we all like our bacon cooked differently – embrace your personal preference!

Mexicano Bacon-Wrapped Hot Dogs

People all around the world enjoy bacon. Here at the Republic of Bacon, we are ceaselessly searching the globe for new ways to enjoy it. In Mexico, they have found a particularly delicious way to enjoy them: Mexicano Bacon-Wrapped Hot Dogs.

Mexicano Bacon-Wrapped Hot Dogs are what they sound like: hot dogs that are wrapped in bacon and then cooked. The resulting combination is predictably delicious. The crispiness of the bacon contrasts with the sizzling softness of a juicy hot dog.

Church Persuades Parishioners by Using Bacon Sandwiches

Some people are willing to do anything for bacon. I have a feeling I’m one of them. A church in England has recently thought of a pretty interesting way to use the lure of bacon by offering a reward: if you come to the church, you can get a bacon buttie.

For those of you who don’t know English slang, a bacon buttie is not some rude term – it is a bacon sandwich. Bacon butties can come in all shapes and sizes, but they are usually very basic: two slices of buttered bread with a serving of bacon in between. If you are feeling saucy, you might top it with HP sauce or ketchup.

The Best Steak and Onions Ever… with Bacon

This is another one of those homey dishes that is inspired by my mother, Mama Bacon. Although I am Italian, through and through, this dish takes on a very English or Polish/Ukrainian feel that has become a staple at home and one of my personal favourites. Eastern European food has the tendency to be very bland in appearance, but more than compensates with flavour and wholesomeness. This dish is all that and more.

I paired the steak with, what else but, potatoes (Bacon Cheddar Mashed Potatoes) and peas (Peas with Mushrooms and Bacon). The onions and wine give the juice created by the steak an extremely round, full flavour without being heavy and thick like traditional gravy. Think of it more as an “au Jus”. The potatoes mop up the juice really well, as you should already know. The thyme serves to brighten up the dark flavours a bit and yield a beautifully balanced meal.

Cross the bridge made of bacon over cantaloupe and egg whites. Once at the top of the bridge you can see bacon mountain in the distance. Just follow the bacon road through every imaginable breakfast food and you will reach bacon mountain.
