How To Use and Appreciate Bacon Fat

Now I am the first to admit that there is nothing better that a crispy, perfectly cooked slice of bacon. That is, to my mind, culinary perfection. But here at the Republic of Bacon, we also want to celebrate diversity in bacon dishes and bacon uses. For example, there may be times when you don’t want the crispy texture of bacon to upset the smoothness of a dish, but still want the flavour. Or perhaps you’re in the mood for something that has just been kissed by the essence of bacon, rather than having the taste of bacon take front-and-centre as it is often wont to do. For moments like these, there is nothing quite like cooking with bacon fat.

The Ultimate Banquet Burger Recipe

I just found out that the Banquet Burger was invented right here in my home town of Toronto. Thank you Francis Deck, you have completely changed my life, and many lives around me. Originally, the “Forest Hill Burger” was made with an all beef patty and topped with bacon cheese and your veg of choice. Canadian back bacon could also be substituted to make it even more Canuck. But I’m going to take it one step further. I’m not just going to put bacon ON my burger, I’m going to put bacon IN my burger. I’m going to use some sharp aged provolone instead of cheddar (although you can use whatever you wish) and I’m going to grill some thick slices of sweet Vidalia onion to make it even sweeter. Can I get a hallelujah?

Dads Cooking with Bacon

In many ways, my family didn’t ascribe to the usual, rigid gender roles that define a lot of people’s identities. My mom was unquestionably the breadwinner of the family, and my favourite toy for years was a bright red fire truck. But in one way, my family was extremely traditional: my mom did all of the cooking. This was certainly not a “women’s work in the kitchen” scenario whatsoever, but rather a product of the fact that my dad could not cook to save his life. I remember once, my mom having the flu and my dad trying to make eggs for us for breakfast; he gave up and took us out instead. He was always one of those people who couldn’t boil water, while my mom could whip up gourmet meals with what seemed like minimal effort.

But just because my dad couldn’t cook an egg without setting the kitchen on fire doesn’t mean most dad’s can’t cook; quite to contrary. More and more men are picking up the spatula, tying on an apron and concocting delicious meals for themselves, their friends and their families. Whether they’re working over an open flame to grill up a robust barbecue feast or working delicately to perfect a souffle, there are some awesome dad-chefs out there in the world. And like a lot of great home cooks, if there’s one thing dads love to cook with, its bacon.

Bacon Love Friday: My Bacon Anniversary

Every now and again, I think it’s important to put the “love” back into Bacon Love Fridays. While these posts are ostensibly to celebrate our affection for all things bacon, sometimes it’s also important to give a nod to the romantic love in our lives too. It just so happens that my second anniversary is coming up in a few weeks, and my sweetie and I have been making some plans to celebrate. We’re not looking to do anything too extravagant, no foreign trips or extremely expensive meals, just some low-key celebrations to commemorate the fact that 24-months in we’re still googly-eyed over each other and barely think about killing each other in our sleep at all.

Because bacon is one of our great shared loves, and one of the things that draws us together, some of our plans revolve around this most delicious of foods. My partner maintains that one of the reasons he’s so crazy about me is for my cooking, and as you can image that means a lot of our meals contain bacon. Out mutual love for this food is a strong point in the relationship, and to celebrating us means celebrating bacon too.

S’mores Meet Bacon

Make no mistake, we’re still deep in the sweet, hot happiness of summer, that time of year that smells like coconut sunblock. There are still weeks and weeks of barbecues and bathing suits to look forward to. But I’ve noticed something in the last few days: that it’s getting a little bit cooler at night, raining a little bit more often, and smelling a bit crisp at the edges of all the humidity. It’s the barest hint of it, to be sure, but Fall is just starting to creep in around the very edges of summer.

As much as I adore the summer (I was born in July and have always relished being able to celebrate my birthday with an epic water balloon fight), Autumn might be my favourite season. Hoodies and sweaters, apples in season, falling leaves, perfectly chilly nights – there is so much to love about the Fall. But I think the thing that I love best of all is having parties that go late into the night around a fire pit, everyone snuggled in their warmest sweaters as we roast hot dogs and marshmallows over the open flame – and make s’smores.

Antony Bourdain Visits Toronto, Loves Bacon

Like many bacon lovers, I’m a huge fan of food television. While I’m not exactly a slouch with the frying pan, there are some evenings when I just don’t feel like a major food undertaking. Those nights, I’m much more likely to grab a bag of sour cream and bacon flavoured chips, put on a pair of my comfiest pyjama pants and enjoy someone else’s culinary creations for a change.

I certainly have my favourite shows, but one celebrity chef who always entertains as much as he makes my mouth water is the incomparable Anthony Bourdain.

Lobster Bisque Recipe – Just Amazing

Lobster Bisque was my first ever experience with the delicious beast. When I was young, I couldn’t bring myself to crack open those shells and pull out the unknowingly delicious meat. See, I have this thing with bugs – if they’re big enough that I can tell they’re looking at me, I don’t like them. A lobster is just a massive bug.

In any case, I was coaxed by my family to at least try their lobster bisque appetizer at a local lobster restaurant in order to taste the essence of lobster and see if I actually did like it. Bacon Baby Clothes – The Newest Fashion Craze

Bacon brings families together. There are few things tat feel more homey or make you feel more loved that waking up on a Saturday morning to watch cartoons when you are a little kid, and already your mom is up and cooking you and your siblings a big breakfast of bacon and eggs. The smell of bacon sizzling in a pan started the morning of some of my best childhood memories. Whether we were going to the beach or a theme park or just playing all day in the back yard, those weekend bacon breakfasts gave us the fuel we needed to get through the day and the delicious aroma made us want to get out of bed no matter how early it was.

While the crispy deliciousness is great for the whole family, not every member might be just ready to sample their first tasty rasher just yet. Since mixing bacon grease in formula or feeding bits of bacon along with cheerios isn’t generally recommended, babies are usually the only family members who can’t fully join in the happiness of a big bacon breakfast.

Bacon Love Friday: Bacon Fest Comes to Toronto

Ah, the bacon festival. Few events celebrate the diversity, creative and passion of bacon with quite as much pomp and panache as an official bacon festival. Each fest varies, depending on its size and the city that it takes place in. Some bacon festivals include bacon-oriented drama events or concerts; others involve contests for the best bacon dishes or wildest and most creative bacon products. But all bacon festivals, no matter how large or small, have one incredibly important thing in common: the food. There is no better opportunity to taste a wide variety of wonderful bacon dishes than at a bacon festival.

While there is a long and storied tradition of bacon festivals South of the border, at long last this grand tradition is beginning to take root in Canadian soil. That’s right Canuck bacon lovers: Toronto is getting it’s very own bacon festival. The Leslieville Farmer’s Market, which runs from June 3rd to October 28th this year, has decided to play host to the city’s inaugural celebration of all things bacon. The event is slated to take pace on August 19th. Prepare your taste buds and your tummies, it is sure to be an excellent ay of culinary adventure.

A few of my friends have visited Spain over the last year. I haven’t been one of them. It seems that a lot of my friends are vacationing overseas and not taking me with them… and its really starting to get on my nerves! Spain has become the new hot spot for budding chefs and restaurateurs. It’s become the new France, in that sense. It is home to 2 of the top 3 restaurants in the world, according to Restaurant Magazine. It’s just a great place for food. Here’s my tribute to one of Spain’s best dishes, baconized of course.
